Another new topic to feature on handsome and pretty will be food. We all love good food. Sometimes, if you are in the mood and have the time, you might even like to spend a whole day preparing and cooking a sumptuous feast for friends (or just for yourself!). But, alas, life rarely presents the opportunity. What we do want, is delicious food that doesn’t cost much, and requires not too much effort. Right?
We are going to make it our mission to find such dishes and share them with your good selves. And perhaps we will all learn a few new tricks as well. There is nothing quite like the vision of others enjoying a meal you have crafted from scratch …
On Today’s Menu …
Pollo Alla Cacciatora (meaning – Chicken Hunter-Stylie)
Now, we have discovered that the Nigella Lawson express recipe works a real treat. So using this as a basic recipe we have added a few bits and pieces.
Cooking time – 30 mins
1 tbsp Garlic Oil (or 1 tbsp of oil & a couple of finely chopped garlic cloves)
1/2 tsp of celery salt
1 tbsp of chopped fresh rosemary
2 bay leaves
1/2 tsp sugar
5 / 6 spring onions finely chopped
110ml white wine
3 or 4 chicken breasts chopped into bite sized pieces
110g chorizo sausage chopped into bite sized pieces
1 can of chopped tomatoes
1 can of cannellini beans
1. In a large pot heat the oil and fry the chorizo, spring onions, and rosemary for a couple of minutes.
2. Add in the chicken, stir well and then sprinkle in the celery salt. Pour in the wine (ok you can have a glass too) and let it come to a bubble before adding the tomatoes, bay leaves and sugar. Put the lid on and let it simmer.
3. After 10 mins add the cannellini beans. Replace the lid and simmer for a further 10 mins.
4. Serve in bowls with a loaf of hearty bread and lots of real butter.
So quick, so easy, and your guests will think you are a genius.
